Quick Lunch Recipe - Kale-Veggie Mix!

Kale Lunch

LA MANGER: Need something quick to eat on busy day? A veggie bowl that's savory and sweet is all you need!

Easy to make in about 20 minutes, prepping a few of your favorite veggies alongside a dried cranberries and nuts completes the meal and will keep you full. Pair with a refreshing glass of Peach iced tea.

Ingredients (makes one bowl):

  • Chopped Kale, 2-3 oz

  • Carrot Chips, 1 oz.

  • 6 Sweet potato slices, cooked

  • Your favorite seasonings

  • Dried cranberries, 1 Tbsp

  • 5 Cashews

  • 3 Avocado slices

  • 1 Tbsp of oil

Steps:

1. In a non-stick skillet, add oil and heat for 1 minute

2. Add kale, carrots, and onion slices and any seasonings you prefer. My favorites are Mrs. Dash Garlic Herb, black pepper, garlic, and red pepper flakes.

3. Sauté vegetables until carrots are semi-soft and kale is slightly wilted. Set aside.

4. Heat sweet potatoes until warm.

5. Assemble in a bowl and add dried cranberries, cashews and avocado slices.

Optional: drizzle honey on top of the sweet potatoes along with a dash of cinnamon sugar.
